Chocolate Covered Tiger Nuts
To make chocolate covered Tiger Nuts head to your local health food store and ask them to show you what Tiger Nuts are. We shop at Source Bulk Foods but we also use Tiger Nuts from Byron Bay Alive Foods.
We cut the chocolate into pieces and then put it into a heat proof bowl. We put the bowl inside a saucepan that had about an inch of boiling water in it. The bowl is pretty much the same size as the saucepan so none of the steam can escape. This then melts the chocolate. Stir constantly as it only takes a couple of minutes.
Once melted remove from the heat and add in the Tiger Nuts and other nuts (if you are allowed them at school). Stir it around like Ariella does in the video.
Once all the nuts are covered well pop the bowl in the fridge so the chocolate can set.
After about an hour remove the bowl and use a knife to get the nuts out and chop them up into snack size pieces.
Wahhhlaaaaa best snack ever in terms of fibre and resistant starch! You can read about why those are so important in our kids picture book Tummy Buggies (available here).
