My daughter Ariella absolutely loves muesli bars but every daycare, kinder and school we have been to is nut free. So we have to make our own! Muesli bars are perfect for lunch boxes and afternoon snacks, although typically the store bought ones contain crazy amounts of refined sugar. So we make our own. Recipes are quiet flexible as you can use a variety of dried fruits, seeds and sweeteners of your own choice, just substituting ingredients. We make so many nut-free varieties using seeds instead.
Spiced Apricot, Orange + Quinoa Muesli Bar
This recipe is so great and really you can use whatever you have in the pantry with it. We often substitute the apricots for goji berries or cacao nibs, but you could try chopped dark chocolate, currants or dried mango instead! We love the fact that it uses applesauce to sweeten the mixture. For us this is a really nice change to honey or brown rice syrup. Ok I have to say this might be a little bit spicy for some of the younger kids but we absolutely LOVE this recipe and if you don't like ginger you can always substitute it for chocolate/ dark chocolate/ cacao.
