Beetroot Baby Puree

Oh my gosh, beetroot is awesome! It's strange how here in Australia we mostly love it but in other countries people tend to think beets are a little bit weird! Don't be fooled! This root vegetable is sweet and can be cooked so many ways it's incredible how versitile it is. Highly nutritious and rich in Calcium, Potassium and vitamin A, beets are of great importance for the healthy development of your baby. They also have a very high level of fiber, and their typical vivid purple color make the food attractive to kids. You can use beetroot juice to make icing or cakes pink, you can cut them and make beetroot chips in the oven. You can add a little to your mashed potato to make it bright on the plate. Beetroot is great for your blood and as a toddler I even gave Ariella carrot, beetroot and celery juice in small amounts to get her used to having vegetable juice instead of fruit juice. It's still sweet it just has more of an earthy taste when juiced. Oh and how could i forget... omg grated beetroot, mint and cut orange (with salt and pepper) makes the best salad ever! I promise you, kids will LOVE it!

Beetroot Baby Puree

2 large beetroot (400g)

Step 1: Peel and cut beets into small pieces.

Step 2: Steam the beet in a stovetop steamer or a Beaba Baby Cook system for approximately 15-20 minutes or until soft.

Step 3: Puree the beetroot in a food processor or blender, using a little of the cooking liquid to get a desired smooth consistency (usually 1-2 tablespoons). You can also use breast milk or formula to mix with the puree, or avocado will make it creamier.
