Potato, Zucchini And Cauliflower Baby Puree

 
I feel like Cauliflower is one of the new "it" vegetables of this decade. When I was a child we called it snowing trees and I absolutely hated it. Mum used to make me sit at the table until I finished every last mouthful. The only way I could stomach it was smothered in a creamy cheese sauce. It's only been in recent years that I have grown to love cauliflower and it's because my friend Jo Whitton (from the blog Quirky Cooking) introduced me to cauliflower rice and cauliflower mash. When I tried it at her house I could not believe how great it was! For babies start with puree, but later on don't forget that you can mix it with leek for a cauliflower mash, or put it in the food processor for cauliflower rice. You can bake it in the oven for finger food or cauliflower "chips" for older babies.

Potato, Zucchini And Cauliflower Baby Puree

Ingredients:
2 potatoes, peeled and diced
1 zucchini
1 cup cauliflower

Instructions:
Step 1: Cut vegetables into small pieces.
 
Step 2: Steam the diced vegetables in a stovetop steamer or a Beaba Baby Cook system.
 
Step 3: Puree the vegetables in a food processor or blender, using a little of the cooking liquid to get a desired smooth consistency (usually 1-2 tablespoons). You can also use breast milk or formula to mix with the puree.
