Lemon Raspberry Chia Seed Pudding

Raspberries are extremely nutrient dense, which means that they provide many nutrients for a small amount of calories, they are good source of fibre and contain lots of antioxidants. Some of the health benefits of chia seeds for kids include good supply of protein, supply of sustained energy, good source of unsaturated omega 3 fatty acids, a good source of antioxidants and provide high dietary fiber.

Raspberries and chia seeds are so awesome that I’ve done quite a few recipes containing them. Some are complicated, for older kids, and some are simple for pureed baby food. Lemon Raspberry Chia Seed Pudding

150 grams raspberries
250 ml cow’s milk or almond milk
2 tablespoons honey
1/2 lemon, juice and zest
1 1/2 tablespoons plain yoghurt (optional)
30 grams chia seeds

Step 1: Puree everything except chia seeds.

Step 2: Stir in chia seeds.

Step 3: Chill for one hour until the chia seeds have expanded.

Step 4: To serve, spoon into Little Mashies pouch filling about halfway and leave in the fridge for up to two days.
