Curried Coconut Sweet Potato Stew with Lamb
Ingredients:
400 grams lamb, cubed
2 tablespoon coconut oil, divided
1 medium onion, halved and thinly sliced
1 ½ tablespoon curry powder
2 carrots, diced
2 sweet potatoes, diced
2 garlic cloves, minced
1 bay leaf
400 ml coconut milk
500 ml chicken broth
¼ teaspoon fine sea salt
½ lime, juice

Method:
Step 1: Melt one tablespoon coconut oil in a large stew pot over medium high heat and brown off cubes of lamb working in two batches if necessary. Once lamb is browned remove from pan and set aside.
Step 2: Reduce heat and add another tablespoon coconut oil. Add onion and stir to coat, scraping off any browned bits from the lamb off of the bottom of the pot. Slowly cook onions until they are translucent.
Step 3: Add curry powder, carrots, sweet potatoes and garlic stirring to coat the vegetables. Add the lamb, bay leaf, coconut milk and chicken broth. Stir to combine and simmer for about an hour until vegetables are tender and the stew has thickened.
Step 4: Remove bay leaf, stir in lime juice and serve. To serve in a Little Mashies pouch cool and puree.
