Coconut Ice Cream with Date Swirl

If you add dates to your child’s fruit intake you can be sure that you are giving one of the best foods to them, as dates are packed with a lot of nutrients and are considered as one of the best foods man has discovered. They relieve us from all kinds of digestive problems and they are instant energy boosters. Coconut is packed with nutrients, rich in vitamin B, protein, zinc, phosphorus and iron. It supplies your baby with essential minerals and electrolytes, helps in gastrointestinal diseases, constipation and diarrhea and urinary tract infections due to its antimicrobial properties. 

Dates and coconut are so awesome that I’ve done quite a few recipes containing them. Some are complicated, for older kids, and some are simple for pureed baby food. Coconut Ice Cream with Date Swirl

400 ml full fat coconut milk
1 to 2 tablespoons honey (to taste)
Juice of one orange
Pinch of salt
Dash of vanilla
10 Midjool dates, pitted
3 tablespoons orange juice or water

Step 1: Whisk all of the ice-cream ingredients together until smooth.

Step 2: Scrape the mixture into a plastic container or bowl large enough to hold the mix plus some excess.

Step 3: Freeze for about twenty minutes and then scrape at the mixture with a fork until it is all broken up and mashed together. Place back in the freezer for another twenty minutes or so and then scrape again.

Step 4: Continue in this fashion until coconut ice cream is frozen and icy. The more your scrape the smaller the ice crystals will be and the finer the texture of the ice cream.

Step 5: Mash the juice (or water) into the dates with a fork until smooth.

Step 6: Once the coconut ice cream is frozen and creamy, swirl date mixture into it by dropping bits of it across the surface of the frozen ice cream and swirl them in with the tip of a knife.

Step 7: Scoop out the coconut ice cream with date swirl and fill Little Mashie pouch.

Alternatively, if you have access to an ice cream machine then you can churn the coconut ice cream in the machine and swirl the date mix in afterwards.
NOTE: If you do not eat the coconut ice cream right away it will freeze to a hard consistency. In order to serve it again, simply put it out at room temperature and scrape at it with a fork every ten minutes or so until it is again smooth and creamy.
