Shepards Pie CupcakesIngredients:
1tbsp olive oil
1/2 small onion, finely chopped
250g beef mince
1 tomato, diced
½ Cup Zucchini, grated
½ Cup Carrot, grated
2 potatoes, peeled & diced
½ Cup Peas, fresh or frozen
1 Tbsn cream or coconut cream
2 Tbsn Chedder Cheese
Step 1: Preheat Oven to 170 Degrees Celsius.
Step 2: Heat olive oil in a saucepan add onion and cook until glassy. Add mince beef, stir and mash with fork while the mince is cooking. Add the tomato, zucchini and carrot and simmer for 10 minutes, or until cooked.
Step 3: Cook the potato in a separate saucepan by covering it with water and boiling for 10 minutes, drain and mash with a potato masher or a fork.
Step 4: Mix through the cream so the mash is smooth.
Step 5: Half fill muffin tray with mince and place 2 Tbsns of peas on top of the mince. Top with the mashed potato and sprinkle on the cheese.
Step 6: Place muffin tray in the oven for 10-15 minutes, until the cheese has browned slightly.
Step 7: Spoon the mixture out to serve to kids, or wait for the muffin tray to cool.
